The CEM IR-97 combines a non-contact infrared thermometer with an RTD probe, so one instrument measures both the surface and the inside temperature of food. The infrared channel covers -40 to 280 °C (-40 to 536 °F) with a 20:1 distance-to-spot ratio and a response time below 500 ms, while the built-in fold-out probe measures internal food temperature from -40 to 200 °C (-40 to 392 °F).

It is a professional instrument for food temperature measurement. Its timer and temperature range indicator light suit HACCP (Hazard Analysis and Critical Control Point) work, helping to make sure the food is safe. The integrated countdown timer with alarm monitors line checks as well as cooking and cooling intervals.

The housing is rated IP65, the display is backlit for clear readings in poorly lit areas, and the resolution is 0.1 °C.
